Someone sent me an email asking about a chicken soup recipe
that they enjoyed in Morocco. I didn’t know exactly which one was it.
But from the description that was given, I thought it was this one.
So I hope you’ll try it & like it whether it’s what you’re looking for
or not, because it’s a really flavorful soup. And forget Not to let me know

Ingredients:
2 chicken breasts cut into cubes (If you have leftovers you can use them)
1 onion (chopped)
1 clove of garlic
1 tsp fresh ginger
1/2 tsp curry
1 tbsp soy sauce
2 tbsp of milk or coconut milk (optional)
50g vermicelli/ noodles
1 liter of chicken stock
A dash of coriander & parsley
Salt
1 tbsp of canola oil
little bit of saffron
Directions:
Heat the oil, add the chicken, onion, ginger, garlic,saffron,
salt. Keep stirring until the onion are wilted.
Add the milk, saffron, curry, soy sauce, chicken stock. Let it
cook for 25 min on medium temperature.
Add the noodles, coriander & parsley. Let it boil for another
10min. Serve immediately.
I make a mean chicken noodle soup, but it is nothing like this. I love these ingredients! I’ve never had chicken noodle soup with curry and ginger, what a great idea. I look forward to giving this a try soon!
I finally got around to checking out your chicken soup recipe. That soup looks really good. It’s cold here and I need something like this. Ginger is naturally heating and I would never have thought to use it in chicken soup. Thanks
