3 medium zucchini
2 to 3 medium carrots
2 scallions
3 tbsp chopped fresh parsley
3 eggs
1/4 cup all-purpose flour
Salt/ black pepper
Pinch of coriander
2 tbsp vegetable oil
Directions:
Wash the zucchini, grate them into a large bowl. Sprinkle with salt & let it stand for 15 min. Peel the carrots & grate them in another bowl. Drain the zucchini over a sieve & press gently with a spoon to extract excess water. Add to grated carrots. Wash the scallions, & slice the white portions into thin rings
& add it to the grated veggies. Add parsley, eggs, & flour to the grated vegetables. Combine thoroughly.
Season with salt & pepper to taste, and coriander. Drizzle a cooking sheet with vegetable oil, spoon 2 tablespoons batter, flatten them into a small pancake & bake them until they’re golden brown.
