This is one of my mom’s best veggies soups. Very simple, healthy & irresistibly delicious, I have to admit that it makes my day whenever I make it. I always wonder how you could get something so delicious from very ordinary ingredients..
Ingredients:
2 carrots
Half an onion
1 medium potato
Broccoli (about 200 grams)
2 zucchini
1 liter of chicken stock
1 tsp black paper
Salt to taste
1/2 tsp ginger
2 Tbsp chopped parsley
1 tsp of olive oil
Directions:
Peel & cut the veggies into chunks. Heat the oil, toss in the onion, the rest of the veggies, spices & parsley. Add the chicken stock. Bring to a boil then cover & turn the temperature to medium low for about 30 minutes. When the veggies are cooked, blend it in a mixer, or use a hand blender. Serve it hot.
P.S: You can cut or add the chicken stock depending on how thick you like your soup.
