After a two hours workout at the Gym, cooking dinner was the last thing I wished for; still the thought of the fresh veggies we just bought that afternoon was irresistible! I was lucky because we had some beef (Makfool: It’s a Moroccan Marrakshi dish) as a leftover. This salad is not something fancy but easy to make and comes out pretty good..
Tomato salad with greek feta cheese.
Serves 2 pers.
prep: 10 min
Ingredients:
2 Tomatoes cut into cubes
1 big cucumber
A handful of boiled macaroni
6- 8 cubes of greek feta cheese
Dry or fresh Basil
1/2 Tsp of vinegar
2 Tsp of olive oil
Salt/ Pepper
Boil the macaroni with a pinch of salt and little bit of olive oil,
drain it, and set it aside.
Cut the cucumber and tomatoes.
Prepare the seasoning in a separate bowl ( salt/pepper, vinegar, basil,
and oil).
mix the tomatoes and the macaroni together. Add the seasoning, the
feta cheese.
Serve in a dish and decorate the sides with the cucumber.
P.S: I seasoned the feta cheese too (Optional)
