Well, I’m not really a morning person and it’s always hard for
me to get out of bed easily, especially that I’ve been going to bed
very late.. Anyway, as my husband always says a good breakfast
is the best way to start your day. In our first months of marriage,
I always thought
it was weird to wake up and eat a big meal for
breakfast (maybe it’s due to the cultural differences or it’s just
because for me there’s nothing like the smell of coffee
in the morning with a fresh croissant. YUMMY!
So, I guess I finally started to appreciate having something
substantial for breakfast from time to time😉
To make this Mexican omelette:
First you’ve to prepare the salsa. (Dice one big tomato.
1 small chili, 1/4 onion, 1 clove of garlic, 1tsp parsley, salt,
1 tsp of lime juice or vinegar. Mix it all)
For the omelette:
serves 2 pers:
2 tsp thick cream
1/2 tsp garlic powder
butter or olive oil.
spray the pan with little bit of olive oil, set the stove on
whisk the eggs. Add the salt, cumin, the cream, garlic powder.
Pour it in the pan and turn the setting to low. cover and let it
cook for 3min.
when it’s done put the salsa on half of the omelette sprinkle
the cheese of of your choice (optional).
Fold the other half and serve immediately.
