Here we are carrots once again! Sunny, sweet, & color vibrant this salad is a MUST and I highly recommend it not because it’s Moroccan but because it’s REALLY good. It is simple & quick to make. You can serve it as a side dish, a starter or even dessert!!
3 to 4 carrots peeled & grated using a grater, NOT a food processor (For texture reasons).
Juice of 2 to 3 Navel oranges. (pls don’t use orange juice from the bottle, it needs fresh oranges)
Sugar to taste
Optional additions: cinnamon, orange blossom. (but you have to taste once without any of these,
you might like it better).
Add the juice & sugar to the carrot, mix WELL for the sugar to dissolve. Sprinkle with cinnamon
powder. Cool for an hour & serve cold.
